Creamy Citrus Watermelon Seed Butter Vinaigrette (Recipe!)

Did we just say watermelon seed butter?! You'd butter beleive it! As soon as we gave it the initial taste test our minds started spinning with recipe ideas. Tahini dressing is a go-to classic, and we wanted to try something similar with this watermelon seed butter, only freshened up a bit for spring with fresh orange juice and lemon zest. This was perfect paired with a green mason jar salad with all the fixings. Happy clean eating!
The Recipe
Makes 8oz of dressing
Ingredients
1/4 cup fresh squeezed orange juice
2 tablespoons Dastony Watermelon Seed Butter
2 tablespoons apple cider vinegar or coconut vinegar
1/2 cup water
1 tsp chia seeds
1/4 avocado
3 tbs lemon juice
2 tsp coconut sugar
1 tablespoon cold pressed olive oil
1 teaspoon lemon zest
salt + pepper to taste - we used 1/2 tsp salt 1/4 tsp pepper
Instructions
1. Blend until smooth and drizzle over a fresh bed of greens and vegetables. Enjoy!
