Lucky Shamrock Mint Chip Nice Cream with NEW Rawmio Essentials Mint (Recipe!)

St. Patrick's Day is the perfect excuse to go a little wild with all of your favorite green foods. Inspired by the launch of our new joy-inducing Rawmio Essentials Bars, specifically our amazing mint chocolate bar, we decided to whip up a raw, vegan, superfood version of a classic green favorite: mint chip ice cream. The only difference is this version is made with 100% whole food, plant based goodness and comes infused with actual superfoods! We knew our Amazing Algae had to get in on this mint chip party, as it adds the most gorgeous green hue to any recipe, not to mention a plethora of vitamins, minerals, phytonutrients, omega fatty acids, and 60-70% complete protein. This recipe couldn't be easier to make and if you're a mint chip fan, you'll be able to satisfy the urge healthfully without dairy and added sugars.
The Recipe
Lucky Shamrock Mint Chip Nice Cream with NEW Rawmio Essentials Mint Bar
Serves 2
Ingredients
2 heaping cups frozen banana, chopped
1/2 cup full fat coconut milk
2 Tbs raw cacao nibs
1 small handful baby spinach (optional nutrient boost)
1 tsp vanilla extract
1/4 tsp peppermint flavor extract, or 2 drops peppermint essential oil (always organic)
1 tsp Veggimins Amazing Algae powder
Instructions
1. Blend all ingredients except cacao nibs in a high speed blender or food processor until thick and smooth.
2. Add cacao nibs and pulse until they are slightly broken up for that mint chip effect.
3. Top with chopped Rawmio Essentials Mint bar. You can also just sub in the Essentials Bar for cacao nibs if you wish. Now gig in and BLISS OUT!
